So what do you do with all of those tomatoes from the garden? Get creative. Spinach and tomato salad is quick and painless to make. As a bonus you can use up a ton of that fall harvest from the garden.
Wash the tomatoes and spinach. Quarter the tomatoes and combine with spinach in large bowl. Top with olive oil. Optionally top with fresh grated parmesan cheese, garlic, and crushed black pepper. Done!
